Cucumber and Cherry Tomatoes- Southwinds Farm Benson,AZ

Ingredients:

2 c. Greek yogurt

1 small cucumber or ½ larger cucumber, peeled if desired

3-4 cloves garlic, smashed + pasted* (Step 3)*

2-4 T. chopped herbs (dill, mint, parsley)

1 T. olive oil

1-2 T. lemon juice

¾ t. salt

Black pepper

Crushed red pepper flake (if desired)

Procedure:

  1. Finely dice half of the cucumber

  2. Shred the other half of the cucumber on a box grater or fine grater, reserve juice

  3. To make the garlic paste: Crush garlic cloves with the back of a knife, remove peels. Mince cloves and sprinkle with salt. Using the back of a knife, press down on the garlic and push away from you with the heel of your hand. The friction of the salt will break down the garlic, creating a paste.

  4. Repeat until garlic is pulpy. **Be sure to face the sharp side of the knife toward you**

  5. Combine yogurt, diced cucumber, shredded cucumber + juice, garlic paste, herbs, oil, lemon juice, salt, pepper and red pepper flakes. Adjust lemon and salt to taste.
