Steam/Fried Bacon Brussel Sprouts

This recipe uses a combination steam/fry technique borrowed from cooking Chinese potstickers - allowing the bottom side to get golden brown caramelization while retaining moisture and vibrant color.

Ingredients:

  • 6 oz. (about 2 cups raw) brussels sprouts

  • 1 slice (1 ½ oz.) bacon, diced

  • ¼ cup water

  • 1 tsp. lemon juice

  • Kosher salt to taste

Procedure:

  1. Remove bottoms of brussels sprouts and cut in half lengthwise.

  2. Heat a wide, heavy-bottomed skillet over medium-high heat.

  3. Add bacon to the pan and allow to render for one minute, then push bacon to the sides of the skillet, leaving an open space to place the Brussels sprouts.

  4. Working quickly, carefully place Brussels sprouts cut side down in the skillet. When all the sprouts are down, allow to cook for one minute, then add water to the skillet and immediately cover with a lid, larger pan, or a wok, face-down.

  5. Let the Brussels sprouts cook until all the water has evaporated, about 5 minutes.

  6. Remove Brussels sprouts from the pan and season with lemon juice and Kosher salt.
