Brussel Sprout and Apple Slaw

Brussel Sprouts- Covilli Brand Organics- Nogales, AZ

Ingredients:

  • 1 cup brussels sprouts, stems removed and finely sliced/shredded

  • ½ cup apple (pick your favorite variety- I like Fuji or Honeycrisp here), peeled and julienned

  • ½ cup carrot, peeled and shredded

  • 1 Tbs. fennel fronds, chopped

  • 1 Tbs. dill, chopped

  • 1 Tbs. lemon juice

  • 1 Tbs. dijon mustard

  • 1 Tbs. honey

  • 2 Tbs. extra virgin olive oil

  • Kosher salt to taste

Procedure:

  1. Combine shredded Brussels sprouts, apple, carrot, fennel, and carrot in a bowl and season with a generous pinch of salt.

  2. Combine lemon juice, mustard, honey, and olive oil in a small bowl and stir thoroughly to combine.

  3. Pour dressing over the slaw and toss to coat.
