Stir-Fried Broccoli and Peas

Broccoli, Sugar Snap Peas and Snow Peas- Blue Sky Organic Farms- Litchfield Park, AZ

Ingredients:

  • 2 heaping cups (about 8 oz.) Broccoli florets

  • 1 cup Snow peas, de-stringed and bias-cut in 1” lengths 

  • 1 cup Snap peas, de-stringed

  • 1 Tbs. Garlic smashed

  • 2 Scallions, bias cut in ¼” width (greens and whites)

  • 1 ½ Tbs. Soy sauce or liquid aminos

  • 2 Tbs. Water

  • 1 ½ tsp. Fish sauce (optional)

  • 2 tsp. Granulated sugar

  • 2 Tbs. Canola oil

  • 1 Tbs. Sesame oil

  • 2 tsp. Sesame seeds, toasted, to garnish

  • 1 Tbs. Cilantro, chopped, to garnish

Procedure:

  1. Heat a wok or wide skillet over high heat.

  2. When the pan is hot, add canola oil. Tilt the pan to let the oil coat the bottom. Add garlic and broccoli and stir fry 1 minute over high heat.

  3. Add snap peas, snow peas, and scallions, and stir fry one minute more.

  4. Add soy sauce, fish sauce (if using), water, and sugar, and stir fry an additional 2 minutes, or until hot and crisp-tender.

  5. Remove from the pan and garnish with a light drizzling of sesame oil, sesame seeds and cilantro.
